Mediterranean Celery with Bite

- 1 Celery bulb
- 1 Onion
- 1 Clove of garlic
- 1 Chilli red fresh
- 6 Dried tomatoes in oil
- 50 g Walnuts
- 100 g Spinach young
- 50 ml Soy cream
- White wine
- Salt
- Black pepper from the mill
- 0,5 Lemon fresh
- Chop the onion, garlic and chilli and sauté them in a little tomato oil from the pickled tomatoes in a saucepan. Add the peeled and chopped celery, sauté briefly and then deglaze with salt, a little water and a dash of white wine and stew with the lid closed.
- In the meantime, cut the tomatoes into small pieces, wash the spinach and roughly chop the walnuts. Roast the nuts in a little oil in a small pan.
- The celery should be crispy, then add the tomatoes, soy cream and walnuts and simmer for 1 minute. Season to taste with salt and pepper.
- Finally add the spinach and let it collapse while stirring in the residual heat. Drizzle with lemon before serving. Yummy! A fresh baguette, a salad or a veggie patty tastes good with it … also pure!
