Mediterranean Celery with Bite

The perfect mediterranean celery with bite recipe with a picture and simple step-by-step instructions.

  • 1 Celery bulb
  • 1 Onion
  • 1 Clove of garlic
  • 1 Chilli red fresh
  • 6 Dried tomatoes in oil
  • 50 g Walnuts
  • 100 g Spinach young
  • 50 ml Soy cream
  • White wine
  • Salt
  • Black pepper from the mill
  • 0,5 Lemon fresh
  1. Chop the onion, garlic and chilli and sauté them in a little tomato oil from the pickled tomatoes in a saucepan. Add the peeled and chopped celery, sauté briefly and then deglaze with salt, a little water and a dash of white wine and stew with the lid closed.
  2. In the meantime, cut the tomatoes into small pieces, wash the spinach and roughly chop the walnuts. Roast the nuts in a little oil in a small pan.
  3. The celery should be crispy, then add the tomatoes, soy cream and walnuts and simmer for 1 minute. Season to taste with salt and pepper.
  4. Finally add the spinach and let it collapse while stirring in the residual heat. Drizzle with lemon before serving. Yummy! A fresh baguette, a salad or a veggie patty tastes good with it … also pure!
