Mediterranean rice dish

Ingredients for 4 servings:

  • some oil
  • 1 onion(s)
  • 2 m.-large zucchini
  • 2 red bell peppers
  • 300 g rice
  • 250 ml vegetable stock
  • 2 packs of tomatoes, pureed
  • 5 basil leaves
  • Herbs, e.g. rosemary, thyme, oregano, parsley
  • salt and pepper
  • Paprika powder
  • 1 pack of Greek feta cheese

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel the onion and slice it thinly. Halve the zucchini lengthwise, quarter it, remove the seeds, and slice it. Cut the bell pepper into strips. Add the vegetables to a hot pan with a little oil and sauté briefly. Add the rice and deglaze with the broth and passata. Season with salt, pepper, and paprika. Tear the basil (this enhances its flavor). Finely chop the herbs and add them. Simmer over low heat for about 20 minutes, until the rice is tender. Serve with diced feta.
