- 2 onions, finely sliced
- 2 garlic cloves, chopped
- 3 zucchinis
- 1 eggplant(s)
- 1 bell pepper(s), yellow
- 1 red bell pepper(s)
- olive oil
- Balsamic vinegar of Modena
- Sugar
- salt and pepper

Cut the vegetables into 5 cm long and 1 cm wide strips and cook them with the onions and garlic in olive oil until al dente. Season with salt and pepper, and deglaze with a little balsamic vinegar. Season with sugar to taste. The salad is delicious served lukewarm. It can also be placed in preserving jars and cooked at 80°C for 15 minutes. This way, it will keep for up to a year.
