Mediterranean shepherd's pasta with zucchini and peppers

Ingredients for 4 servings:

  • 300 g tomatoes
  • 2 small zucchini
  • 1 bell pepper(s), yellow
  • 1 pack of shepherd’s cheese, approx. 200 g
  • 400 g pasta
  • some olive oil
  • n. B. spice(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

vegetarian

Bring the water for the pasta to a boil. Meanwhile, dice the tomatoes, zucchini, and bell peppers. Cook the pasta according to the package instructions and sauté the vegetables in a pan with a little olive oil for about 7 minutes. Season the vegetables with salt, pepper, Italian herbs, and herb salt to taste. Once the pasta is done, dice the feta cheese and add it to the pan with the vegetables. Mix briefly. The cheese shouldn’t melt completely, so it remains in small cubes.
