Ingredients for 5 servings:
- 300 g flour
- Flour for dusting
- 200 g sugar
- 100 g butter
- 2 tbsp honey
- 3 eggs
- 1 tsp baking powder
- 250 g mascarpone
- 250 g low-fat curd cheese
- 250 g whipped cream
- 1 tsp vanilla sugar
- n. B. Walnuts, finely ground

Mix the sugar, butter, and honey in a double boiler until smooth. This takes about 4-5 minutes. Stir the baking powder into the cream. Then remove the bowl from the water bath. Now quickly stir the eggs, one at a time, into the hot mixture before they set. Now gradually add the flour to the mixture and knead until you have a dough that can be rolled out. Once the dough is ready, set aside for 2 hours. Then dust the dough with flour and divide it into 9-11 equal pieces. Then roll these out on baking paper to a diameter of 21 cm. Bake the flatbreads one after the other in a preheated oven at 200°C (top/bottom heat) for about 5 minutes. While the flatbreads are still hot, trim the edges straight and remove the flatbreads from the baking paper. Please save the edges! For the cream, put the mascarpone, quark, and vanilla sugar in a bowl and beat with a mixer until creamy. Whip the cream separately until stiff peaks and then fold in. Finely grind the walnuts and place them in a plate. Now grind the remaining edges of the flatbreads and place them on a separate plate. Mix the ground edges with 3 tablespoons of ground walnuts. Place one flatbread on a plate, spread with the cream, then sprinkle with walnuts and place the next flatbread on top. Repeat this process until all 9-11 flatbreads have been used up. Finally, spread the cream on the sides of the cake and sprinkle with the walnut mixture, decorating if desired. Then let the cake chill in the refrigerator for 6-8 hours.
