Melon Peel
The perfect melon peel recipe with a picture and simple step-by-step instructions.
Fruit inlay
- 200 ml Martini bianco
- 25 ml Lemon juice
- 1 Knife point Citric acid
- 250 g Qimiq Classic Natural
- 50 g Mint sugar
- 300 g Watermelon
preparation
- Core 1,600 grams of melon – cut the 300 grams for the pureed base into large cubes – cut the 300 grams for the fruit filler into small, even cubes
Preparation of the base
- Add martini bianco and lemon juice to the roughly diced melon pieces – add room-warm QimiQ and puree everything finely
- season with mint sugar (mint sugar) and citric acid (use citric acid from the food department – not the one for decalcifying!)
completion
- Now mix the diced melon pieces into the base mixture as a fruit filler and portion everything into glasses – cover the glasses with cling film and leave for at least 4 hours. refrigerate
serve and decorate
- just before serving, remove the foil and decorate the cold bowl with mint and some marinated melon pieces (bland watermelon? We will help you get on your feet …)
