Melon salad with goat's cheese

Ingredients for 4 servings:

  • 400 g melon(s) (watermelon), prepared and weighed
  • 200 g goat’s cheese
  • 4 tbsp honey
  • 4 sprigs of thyme
  • 2 tbsp balsamic vinegar, white
  • Pepper, from the mill
  • some thyme sprigs, for garnishing

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Finely chop the thyme. Gently warm the honey, but do not boil it. Stir the thyme into the honey and let it cool. Meanwhile, dice the melon and flake the goat’s cheese. Arrange on plates and season with pepper. Mix the balsamic vinegar with the thyme honey and drizzle over the melon cubes. Garnish with thyme sprigs and serve. This salad can be served as a refreshing appetizer or as a dessert.
