Millet and avocado salad

Ingredients for 2 servings:

  • 150 g millet
  • 2 avocados
  • ½ lime(s), juice
  • 2 garlic cloves, pressed or very finely chopped
  • 2 tbsp cream cheese
  • salt and pepper
  • chili powder
  • 1 head of lettuce, e.g. Batavia or mixed salad
  • 2 small tomatoes
  • 50 g grapes
  • 2 tbsp hard cheese, grated e.g. Grana Padano, for sprinkling
  • Chia seeds for sprinkling

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Cook the millet as directed on the package. Usually, boil the millet in twice the amount of water and then let it swell. Prepare the guacamole. Halve the avocados and remove the pits. Mash the avocado flesh in a bowl and mix with the garlic, cream cheese, and lime juice until creamy. Season the guacamole with salt, pepper, and chili to taste. Wash the lettuce, spin dry, and tear into pieces. Cut the tomatoes into medium-sized pieces. Place the millet, grapes, and tomatoes on top of the lettuce on a plate. Pour the guacamole over the lettuce and garnish with chia seeds and hard cheese.
