Millet salad with feta cheese

Ingredients for 4 servings:

  • 200 g millet
  • 500 ml vegetable stock
  • 400 g feta cheese made from cow’s milk
  • 1 jar Ajvar, mild
  • 5 m.-large tomato(s)
  • 1 cucumber(s)
  • 4 tbsp extra virgin olive oil
  • 2 tsp walnut oil
  • 50 ml red wine, dry
  • 1 pinch of salt

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

vegetarian, also very tasty cold

Wash the millet and briefly bring to a boil in the vegetable broth. Let it simmer with the lid closed for 20 minutes. Meanwhile, cut the tomatoes, cucumbers, and feta cheese into small pieces. Mix with the ajvar and oils. Once the millet has simmered, mix it with the red wine in a pot while it’s still hot to evaporate the alcohol. Mix everything gently and add a little salt. This quick-to-prepare meal is delicious both hot and cold. The millet salad, in the specified quantity, is perfect for two people as a warm dinner, and the next day as a wholesome meal to take along on an excursion or hike (cold). 550 kcal per serving.
