Ingredients for 4 servings:
- 2 large carrots
- 1 zucchini
- 1 onion(s)
- 1 garlic clove(s)
- 400 g minced meat
- 3 large tomatoes
- 1 handful of mozzarella, grated, optional
- 2 tbsp tomato paste
- 1 tbsp cream cheese
- 200 ml water
- Salt and pepper or minced meat seasoning
- some oil for frying
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Chop the onion and garlic. Use a vegetable peeler to make vegetable noodles from the carrots and zucchini. Chop the large tomatoes. Fry the onion and garlic in a little oil. Add the minced meat to the pan, fry, and season with salt and pepper. I also like using a minced meat seasoning that I bought at the supermarket. Then add the tomato paste and fry. Stir frequently until the tomato paste is evenly distributed. Then add the cream cheese and mix until it is well distributed. Add the chopped tomatoes to the pan and sauté until they are slightly softened and the dish has a creamy consistency. Deglaze the minced meat sauce with 200 ml of water and simmer slightly. Then add the vegetable noodles. Reduce the heat slightly and simmer until the vegetable noodles are nice and soft. If you like, you can add a handful of grated mozzarella at the end. Stir the dish thoroughly again and serve.
