Ingredients for 4 servings:

  • 500 g beans (broad beans), broad beans, dried
  • 2 bunches of chard, cooked and finely chopped
  • 1 m.-sized onion(s)
  • 1 baguette(s), sliced

Instructions

Working time approx. 10 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 1 hour; Total time approx. 9 hours 10 minutes

Soup made from dried broad beans

Soak the beans overnight. Cook in salted water for about 1 hour, drain, and mash with a fork. Cook the chard in salted water for about 15 minutes. In a saucepan, roast the finely chopped onion, add the broad beans and chopped chard, and mix well. Season with salt and pepper and drizzle with olive oil. 35 kcal per serving.
