Minestrone with tortellini

Ingredients for 6 servings:

  • 250 g onion(s)
  • 250 g celery
  • 750 g carrot(s)
  • 800 g tomatoes
  • 250 g raw ham or smoked bacon
  • 2 liters of vegetable broth
  • 2 bay leaves
  • 600 g tortellini, fresh
  • 75 g Parmesan
  • Salt
  • pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Clean the vegetables and cut into small cubes. Dice the ham or smoked bacon, if desired, and fry in a large pot. Add the vegetables and sauté, then pour in the vegetable stock. Add the bay leaves, bring to a boil, and simmer covered for 30 minutes. Meanwhile, cook the tortellini in salted water. If using dried tortellini, use only 300g. Coarsely grate the Parmesan cheese. Season the soup again with salt and pepper and serve in bowls with the tortellini and Parmesan cheese.
