Mirabelle and marzipan muffins

Ingredients for 15 servings:

  • 200 g flour
  • 80 g ground almonds
  • 1 packet of baking powder
  • 140 g brown sugar
  • 250 ml milk
  • 80 ml vegetable oil
  • 1 egg(s)
  • 1 bottle of bitter almond flavor
  • 50 g marzipan, sliced
  • 100 g mirabelle plums, roughly diced

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Simple, quick and delicious

Combine the flour, ground almonds, baking powder, and sugar. Mix with the milk, egg, oil, and bitter almond flavoring until a smooth batter forms. Fold in the marzipan shavings and mirabelle plum cubes. Fill muffin tins and bake at 175°C (convection oven) for 15-20 minutes. Tips: The muffins will be moister if you fill one of the holes in the muffin tin with water, allowing the steam to circulate in the oven during baking. This is ideal for using up hardened marzipan (it’s easier to shave and spread into the batter).
