Miri's vegan and Mediterranean lupin patties

Ingredients for 5 servings:

  • 90 g sweet lupin flour
  • 75 g oat flakes, fine
  • 50 g lupin meal
  • 1 ½ tsp salt
  • ¾ tsp pepper
  • ¾ tsp garlic granules
  • 2 tsp paprika powder
  • 2 tsp onion powder
  • 3 tsp, heaped herbs (thyme, rosemary, basil, oregano)
  • 280 ml water, hot
  • e.g. olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Weigh or measure all ingredients except the hot water and olive oil and place them in a bowl. Mix the dry ingredients with a spatula, then add the hot water and stir. The mixture should be homogenous and hold together well. Add a little liquid or lupin meal if necessary. Wet your hands slightly and form five flat patties. Heat a little olive oil in a pan and fry the patties on a medium heat for about 5-7 minutes on each side. Serve warm or enjoy cold. They go well with flatbread with Mediterranean vegetables, a green salad, baked potatoes with dip, etc. The patties freeze well.
