Mixed fried potatoes with vegetables

Ingredients for 4 servings:

  • 1 kg potatoes, peeled, diced approx. 1.5 cm
  • 2 zucchini (courgettes), washed, quartered, diced approx. 1.5 cm (250 g)
  • 2 peppers, pitted, peeled, diced about 1.5 cm (300 g)
  • 5 large carrots, peeled, quartered, and diced 1 cm (400 g)
  • some olive oil
  • some salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

quick fried potatoes with vegetables

Heat a frying pan with a little olive oil, add the potatoes, and fry for about 10 minutes. Add the carrots and fry for another 5 minutes. Then add the peppers and zucchini and fry until cooked through. Season with salt and pepper to taste. Gradually add more olive oil if necessary.
