Ingredients for 4 servings:
- 1 kg potatoes, peeled, diced approx. 1.5 cm
- 2 zucchini (courgettes), washed, quartered, diced approx. 1.5 cm (250 g)
- 2 peppers, pitted, peeled, diced about 1.5 cm (300 g)
- 5 large carrots, peeled, quartered, and diced 1 cm (400 g)
- some olive oil
- some salt and pepper

Working time approx. 15 minutes; Total time approx. 15 minutes
quick fried potatoes with vegetables
Heat a frying pan with a little olive oil, add the potatoes, and fry for about 10 minutes. Add the carrots and fry for another 5 minutes. Then add the peppers and zucchini and fry until cooked through. Season with salt and pepper to taste. Gradually add more olive oil if necessary.
