- Wash and roughly chop the parsley and thyme. Mix the flour and baking powder. Mix the flour, eggs, milk, salt and pepper together well. Add the chopped herbs to the batter and stir. Wash and finely chop the dill. Wash the cucumber and cut into slices. Mix the mustard, honey and dill together. Season the sauce with salt and pepper.
- Heat a pan with a little oil. Pour some batter into the pan and fry for 2 minutes, then turn and fry for another 2 minutes. Take out the finished pancake and keep warm. Bake more pancakes from the rest of the batter. Arrange the pancakes with the smoked salmon, cucumber and the honey-mustard sauce and serve.
