Mom's roulades

Ingredients for 4 servings:

  • 4 slice(s) of beef roulade(s).
  • 4 slice(s) bacon, fat
  • 4 slice(s) bacon, streaky
  • 2 onions
  • 4 tsp mustard
  • some salt and pepper
  • some fat, for frying

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours

Season one side of the meat with salt and pepper. Place one slice of fat and one slice of streaky bacon on each roulade. Spread 1 teaspoon of mustard on the bacon, place 1/4 of an onion on top, and roll it up. Seal the roulade securely (e.g., with string or skewers). I personally use star-shaped twine and wrap two strands over the body and one longer strand over the long side. Sear the roulades until crispy, then add the remaining onions a little later. Add another 1-2 onions depending on the size of the onion and your personal taste. Continue searing the onions with the roulades. Then pour on water. The roulades shouldn’t be covered with water, though. The sauce will be tastier if you use less. Season everything again with salt and pepper, then simmer covered for 1 1/2 hours.
