Ingredients for 6 servings:
- 1 kg Hokkaido pumpkin(s)
- 400 g potatoes
- 2 onions
- 2 cloves garlic
- 1,200 ml vegetable broth
- 400 g cream cheese
- 1 bunch of parsley
- possibly Mettwurst or Kabanossi
- possibly salt and pepper
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour
Finely chop the onions and garlic cloves and sauté. Dice the pumpkin and potatoes and add them to the garlic and onions along with the broth. Let everything simmer for about 25 minutes. Then add the cream cheese and chopped parsley and puree. Season with salt and pepper, if desired. Add the Mettwurst or Kabanossi sausages, if desired, and heat through.
