Ingredients for 2 servings:
- 1 pack of puff pastry
- 300 g mushrooms or other mushrooms
- 200 g sauce (cranberry or lingonberry sauce)
- 250 g cheese (halloumi or goat cheese)
- 1 onion(s)
- some oil

simple, but sooo delicious
Roll out the puff pastry on a baking sheet. Preheat the oven to 200°C (fan oven). Clean and slice the mushrooms. Peel a small to medium onion and dice it into small cubes. Heat the oil in a pan and fry the onions and mushrooms. Cut the cheese into slices or cubes. Meanwhile, blind bake the puff pastry in the preheated oven for about 5 minutes. Then spread the cranberry sauce evenly over it, then pour the mushroom and onion mixture over it and sprinkle the cheese cubes on top. Return to the oven and bake until the cheese is a lovely golden brown. This dish is super simple and tastes simply heavenly. Some liquid may collect in the baking sheet; you can try carefully draining it off and baking for a short while longer, but the flavor won’t be bad.
