Mushrooms in mustard sauce

Ingredients for 4 servings:

  • 800 g mushrooms or wild mushrooms, cleaned and sliced
  • 1 medium-sized onion(s), finely chopped
  • 3 tbsp, leveled oil
  • 600 ml vegetable stock, instant or fresh
  • 200 g sour cream or cream cheese
  • 1 bay leaf
  • 4 tbsp, heaped mustard
  • salt and pepper
  • Vinegar to taste
  • Sugar to taste
  • 1 bunch of chives, finely chopped

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

with mashed potatoes, boiled potatoes, rice etc., simple, quick, vegetarian

In a saucepan, heat the mushrooms and onion in oil for 10 minutes over medium heat. Add the vegetable broth, stir in the sour cream or cream cheese. Add the bay leaf and mustard, and season with salt and pepper. Simmer the dish for another 10 minutes on low heat, adding vinegar and sugar to taste. Sprinkle chives over the dish to serve.
