Mussels with Curry
The perfect mussels with curry recipe with a picture and simple step-by-step instructions.
- 1,5 kg Shellfish
- 2 Onions
- 2 Clove of garlic
- 1 tbsp Curry
- 2 tbsp Flour
- 1 cups Creme Legere
- Sugar
- Salt
- Pepper
- Dry white wine
- Butter
- Baguette
- 1 small bunch Chives
- Wash and sort the mussels
- 1 Chop the onion and garlic and bring to the boil with 200ml water and a little white wine, salt and pepper
- Add the mussels and simmer for about 10 minutes until all the mussels have opened
- Pour off the mussel stock and collect it
- – Now melt the butter in a saucepan and sauté the 2nd onion until translucent – make a roux with curry powder and flour and deglaze with the mussel stock
- Now add the Créme Légère and let the sauce simmer a little and season with salt, pepper and sugar
- Pour the chives over the mussels and sauce
