Mussels with saffron

Ingredients for 2 servings:

  • 1 kg mussels
  • 1 tbsp oil (peanut oil)
  • 1 ½ dl white wine
  • 1 clove(s) garlic
  • 3 dl sweet cream
  • 1 pinch of saffron threads or 1 saffron sachet
  • 1 bunch of parsley
  • Pepper, white

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the mussels. Finely chop the garlic and sauté in peanut oil. Add the mussels and deglaze with white wine. Cover the pan and let it cook with the lid on until all the mussels have opened (about 5 minutes). Add the cream, saffron, and pepper to the mussels. Sprinkle with parsley before serving. Serve with baguette. We often pour this “sauce” over pasta, too!
