Ingredients for 1 servings:
- 160 g flour
- 1 tsp salt
- 1 tbsp sugar
- 100 g butter, cold, diced
- ½ cup ice water
- 5 nectarines
- 5 tbsp jam (rose, but apricot, currant or strawberry jam also works)
- 2 tsp lavender flowers
- Butter for the mold

Sift the flour, salt, and sugar into a bowl, then use two knives or a pastry cutter to mix the butter into the flour. Next, use a dough kneader and add just enough ice water to create a smooth dough. Wrap the dough in cling film and place in the refrigerator for 30-45 minutes. In the meantime, pit and slice the nectarines. Heat and melt the jam. Butter a tart pan or small baking dishes. Preheat the oven to 190°C (top/bottom heat). Roll out the dough and press into the pan. Arrange the nectarines nicely on top of the dough. Scatter some lavender blossoms over it and pour the jam over it. Bake in the preheated oven on the middle rack for 35-45 minutes, until the dough is crispy and golden brown. Allow to cool. Serve with whipped cream or ice cream.
