Ingredients for 1 servings:

  • 500 g flour
  • 3 eggs
  • 500 g rock candy
  • 250 g butter
  • 750 ml water
  • ½ package anise, ground
  • ½ packet cardamom, ground
  • 1 pinch of salt
  • 2 tbsp rum

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

Boil water and dissolve the rock candy in it. Allow to cool. Gradually stir in the flour, eggs, melted butter, and spices. Finally, add the rum. Cover and let stand for a day. To bake, you need a special New Year’s cake iron. Grease it, pour in 1 tablespoon of batter, and bake until the cake is lightly browned. Remove from the oven and immediately roll it up (like an ice cream cone). Allow to cool, then store in a tin or other container. New Year’s cakes will keep for a long time if stored this way. You can eat them plain or filled with cream. In East Frisia, they were always eaten at New Year’s, but you can of course eat them at Christmas too.
