Filipino soup made from vegetables and beef

Dice the onions and garlic and sauté in a large pot until translucent. Add the beef, cut into large pieces, and fry lightly. Pour in the water, add the peppercorns and fish sauce, and cook until the meat is tender. Roughly dice the potatoes, halve the carrots lengthwise and widthwise, quarter the cabbage, and slice the pak choi. First, add the potatoes and carrots to the boiling beef, then the cabbage, and finally the pak choi. Season to taste with beef broth and fish sauce. Serve the soup with rice, if desired.
