Noodles with spinach and peanut sauce

Ingredients for 2 servings:

  • 250 g pasta, e.g. fusilli
  • n. B. water
  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 small piece(s) of ginger
  • 1 tbsp oil
  • 250 g leaf spinach, frozen, not chopped
  • 200 ml milk
  • 100 ml vegetable stock
  • 2 tbsp peanut butter
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cook the noodles in salted water according to the package instructions. Finely dice the onion, garlic, and ginger and sauté in the oil. Add the thawed spinach leaves and sauté briefly. Add the milk and vegetable stock and bring to a boil. Stir in the peanut butter and simmer the sauce over low heat for about 5 minutes. Season with pepper and serve with the noodles.
