North German chopped beans

Ingredients for 4 servings:

  • 1 ½ kg beans, green, fresh
  • 1 onion(s)
  • 8 potatoes, waxy variety
  • 4 sausages (cabbage sausages)
  • 100 g bacon, streaky, smoked
  • 2 vegetable stock cubes
  • 1 tbsp salt
  • 1 bunch of savory

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Wash the beans and trim off the ends. Chop the beans using a bean grinder and season well with salt. Using a hand-cranked bean grinder is quick and the results are excellent; it’s the only way the beans develop their typical chopped bean flavor. Bean grinders are still available in stores, but you’ll have to search for them. Cut the potatoes into thumb-thick cubes, or larger ones are okay. Dice the onion and bacon and fry them. Add the finely chopped beans, potatoes, and sausages, bring to a boil with about 1.5 liters of water. Add the stock cubes dissolved in a little hot water and the savory, and let everything simmer gently for about 30 minutes. If you want to thicken the soup, take 2-3 ladles of soup with as many potato pieces as possible, puree this portion with a hand blender, and then add it back to the rest of the soup.
