Nut Bolognese

Ingredients for 4 servings:

  • 150 g nuts, finely chopped
  • 1 onion(s)
  • 2 cloves garlic
  • some oil
  • 750 g tomatoes, peeled or chopped, fresh
  • Tomato paste or Ajvar
  • 2 tbsp herbs (oregano, thyme), chopped
  • salt and pepper
  • possibly chili powder

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Roast the finely chopped nuts in a pan without fat. Finely chop the onion and garlic and sauté them in the oil in a saucepan. Peel the tomatoes (peel if necessary) and dice them slightly. Add the nuts, herbs, and tomatoes to the pan with the onions and garlic and simmer for 15 minutes. Add tomato paste or ajvar as desired (the amount depends on how thin the sauce is), season generously with salt, pepper, and perhaps the chili, and simmer for another 10 minutes. Serve the sauce with pasta or use it in a lasagna. Tip: I used hazelnuts and walnuts and a few almonds for the Bolognese. But others will also work, such as macadamia nuts, cashews, or Brazil nuts. A little sesame is also a good idea. I like to season with gomasio (= sesame salt).
