Ingredients for 1 servings:

  • 3 egg yolks, size L
  • 80 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 200 g nuts, ground
  • 4 tbsp milk, 3.5% fat
  • 40 g breadcrumbs
  • 4 egg whites, size L
  • 1 tbsp breadcrumbs for the form

Instructions

Working time approx. 2 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 17 minutes

Beat the egg yolks with the sugar and vanilla sugar until frothy. Then stir in the nuts, salt, milk, and breadcrumbs, and season to taste. Beat the egg whites until stiff and fold in lightly. Grease a pudding dish, sprinkle with the remaining breadcrumbs, and pour in the mixture, pressing firmly. Cook in a bain-marie for 60 minutes. Finish cooking in the residual heat for about 15 minutes. Loosen the sides of the nut pudding and turn it out onto a serving platter. Serve with vanilla or wine foam sauce or lightly sweetened unwhipped cream. The nut pudding also tastes delicious cold.
