Oatmeal and vegetable casserole

Ingredients for 4 servings:

  • 200 g oat flakes
  • 300 ml milk
  • 2 eggs
  • 100 g peas
  • 100 g corn
  • 100 g bell pepper(s), red
  • 80 g feta cheese
  • Butter flakes
  • Butter for the mold
  • salt and pepper
  • Herbs, Italian

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 30 minutes

In a bowl, add the oats, salt, pepper, and herbs. Whisk the eggs with the milk, pour over the oats, mix well, and let rest for 30 minutes. In the meantime, dice the cheese and bell pepper. Drain the peas and corn and let them drain. Preheat the oven to 180°C (fan/convection oven) and grease a baking dish with butter. After 30 minutes, combine all the ingredients, pour the mixture into the baking dish, and top with small knobs of butter. Then place in the hot oven for 40 minutes. Cover with aluminum foil after about 20 minutes.
