Ingredients for 1 servings:
- 125 g butter, soft
- 150 g sugar
- 2 eggs
- 3 medium-sized potatoes, boiled cold (about 200 g)
- 3 drops of bitter almond flavor
- 70 g oat flakes, fine
- 175 g flour
- 1 packet of baking powder
- 2 tbsp breadcrumbs for the mold
- powdered sugar
Instructions

Cream the butter and sugar until fluffy, then gradually beat in the eggs. Press the potatoes through a potato ricer or mash them with a fork, mix with the bitter almond oil, and fold in. Mix the oats with the flour and baking powder and stir into the batter. Preheat the oven to 175°C. Grease a 22 cm springform pan and sprinkle with breadcrumbs. Pour the batter into the pan and smooth it down. Bake on the lowest rack in the oven for about 40 minutes. Let the cake cool in the pan for a few minutes, then remove from the pan and let it cool completely on a wire rack. Sprinkle with powdered sugar to serve.
