Ingredients for 40 servings:

  • 125 g potatoes, cooked (floury)
  • 60 g butter
  • 60 g sugar
  • 1 egg(s)
  • 250 g flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • 1 vanilla pod(s) (the pulp)
  • 1 tsp lemon zest, grated
  • 150 g plum jam
  • 1 egg yolk
  • 2 tbsp milk
  • 2 tbsp granulated sugar

a very tasty cookie recipe made from potato dough, makes about 40 pieces

Peel cold potatoes and finely grate them or press them through a potato ricer. Knead them into a smooth dough with butter, sugar, egg, flour, baking powder, salt, vanilla seeds, and lemon zest. Chill the dough for 30 minutes. Preheat the oven to 175°C. Line a baking tray with baking paper. Roll out the dough to a thickness of about 3 mm. Cut out circles (6 cm in diameter – wine glass size!) and place them on the baking tray. Spread some plum jam on each circle, leaving about 1 cm free around the edges. Fold each circle up on three sides. Press the edges of the dough together firmly to form a triangular shape. Mix the egg yolk with the milk. Brush the cookies with this mixture and sprinkle with sugar. Bake in the oven for about 12 minutes until golden brown.
