Ingredients for 4 servings:

  • 750 g beef, diced
  • 1 sausage (chorizo), cut into pieces
  • 250 g chickpeas
  • 750 g tomatoes
  • 1 red bell pepper(s)

  • 3 large onions
  • 5 garlic cloves
  • 1 tsp paprika powder
  • Saffron, some threads
  • some thyme
  • some cumin
  • 2 bay leaves
  • 1 jar white wine
  • some sugar
  • some salt
  • Parsley

Chickpea meat stew

Soak the chickpeas for about 24 hours. Then cook them in a pressure cooker with the beef for about 50 minutes until soft. In a separate pot or deep-sided pan, fry the finely chopped onions until translucent and add the finely chopped garlic. Then add the finely chopped tomatoes and the sliced ​​bell pepper and sauté until soft. Then add the chickpeas and beef. Add the spices, wine, and sausage, and simmer on low heat for about 30 minutes. Add the finely chopped parsley before serving.
