Omelette with broccoli and cherry tomatoes

Ingredients for 2 servings:

  • 4 eggs
  • 100 g broccoli
  • 100 g cherry tomatoes
  • 1 spring onion(s)
  • some dill
  • salt and pepper
  • Paprika powder, sweet
  • Paprika powder, hot
  • oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Simple and vegetarian

Whisk the eggs with a little salt and let rest for a while. In the meantime, wash and finely chop the tomatoes and spring onions, and add them to the eggs. Remove any small broccoli florets and add them as well. Finely chop the dill and add it as well. Then whisk everything together and add the seasoning. Add a little oil to the pan and fry the egg mixture slowly over medium heat, stirring occasionally. Taste and adjust seasoning before serving. Serve with ketchup, if desired.
