Indian dal with spring onions, ginger and garlic

Wash the spring onions and slice them into rings. Heat the oil (or margarine or butter, if you prefer) in a saucepan and lightly brown the spring onions. Once the spring onions have turned golden brown, reduce the heat, add the ginger, chili, and turmeric, and fry gently (stirring occasionally). Stir in the lentils and pour in the water. Simmer over low heat for 20-30 minutes, until the lentils are soft. Finally, season to taste. Adjust the seasonings to taste. You can vary the spices. You can also use other Indian spices, depending on your taste.
