Onion – Fennel – Pappardelle with Breadcrumbs
The perfect onion – fennel – pappardelle with breadcrumbs recipe with a picture and simple step-by-step instructions.
Papardelle – very broad ribbon noodles
- 5 tbsp Flour
- 3 tbsp Rapeseed oil or olive oil
- 120 ml Water approx.
- Salt
Onion and fennel sauce
- 1 Fennel bulb
- 2 Onions
- 1 Small piece of hot peppers
- Salt, pepper, sugar, caraway seeds
- Whipped cream or soy cream
- Butter or oil
- 2 Slices of wholemeal toast
- Pasta dough: Put the flour on the work surface and make a hollow in it, the oil and salt go into it, stir into the flour with your fingers and slowly add the water (not too much at once), kneading until the dough has an even consistency and no longer sticks, then knead for another 3-4 minutes and let the dough rest as a ball for about 30 minutes.
- In the meantime, cut the onions into wedges and finely slice the fennel. First sauté the onion in a little fat, caramelize it lightly with sugar and season with salt, pepper, a little caraway seeds and the chopped peppers. Add the fennel and simmer gently until the onions are nice and soft. Dust some flour over it, stir and pour the cream on until a creamy sauce is formed.
- Tear the toast into small pieces (do not cut, it should be small, crispy “shreds”).
- Roll out the pasta dough very thinly (1-2mm) on the lightly floured work surface and cut into approx. 3cm strips. Hang up the pasta briefly to dry (e.g. on the handle of the oven). Bring plenty of water to the boil in a saucepan and season with salt. Add the noodles individually to the water and bring to the boil briefly, let them steep for another 1-2 minutes (test the firmness of the bite, they cook very quickly), drain and rinse with cold water.
- Fry the toasted crumbs in butter or oil until crispy until golden brown.
- Place the onion and fennel sauce on the preheated plates, arrange the pasta on top and sprinkle with the breadcrumbs. Finished!
- Lamb’s lettuce or a colorful mixed salad goes well with it, depending on your mood.
- Please don’t leave out the crumbs, they add the finishing touch to the dish!
