Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 20 minutes
Season the egg with salt and pepper and beat with a little mineral water until frothy. Add the flour and beat with a dash of mineral water until a runny batter forms. Place the batter in the refrigerator for one hour to rise. In the meantime, peel the onion, halve it, and cut it into half rings. Wash the spring onions, removing any wilted, dirty, or dry leaves and the beard. Cut the rest into fine rings. Mix the onions together and sauté in a heated pan with a little fat. Remove the sautéed onions from the pan. Pour half of the batter into the pan, add the onions back in, and cover with the other half of the batter. Cook the pancakes until golden brown on each side.
