Ingredients for 9 servings:

  • 500 g wheat flour, type 550
  • 15 g yeast, fresh
  • 1 tsp honey
  • 2 tsp salt
  • 1 tbsp instant malt coffee
  • 280 ml water, lukewarm
  • 2 tbsp olive oil
  • 2 handfuls of fried onions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Mix all ingredients well and knead in a food processor for about 8 minutes. Cover and let rest for 1 hour, ideally in the oven with the light on. Divide the dough into about 9 portions, roll into balls, and let rise again on a baking sheet, covered, for 15 minutes. Preheat oven to 250 degrees Celsius (480 degrees Fahrenheit). Brush the rolls with water and dust with flour. Place in the oven and bake for about 15 minutes. Steam 2-3 times. Then release the steam and reduce the oven to 200 degrees Celsius (400 degrees Fahrenheit). Continue baking the rolls for about 10-15 minutes, slightly opening the oven door for the last 5 minutes, and finish baking (I always place a wooden spoon between them).
