Onion soup with almonds

Ingredients for 8 servings:

  • 2 cup(s) onion(s), finely chopped (about 3 – 4 pieces)
  • 2 tbsp olive oil
  • 600 ml white wine
  • 600 ml milk (almond milk)
  • 3 tbsp almond(s), coarsely chopped
  • 8 slice(s) baguette(s), lightly toasted
  • some oil and
  • Butter for butter flakes
  • Spice(s) of your choice

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

medieval onion soup based on a recipe from the 15th century (England).

Brown the onions in olive oil until golden, add the wine and almond milk, and season to taste. Simmer for 20-30 minutes (almost boiling, but not boiling). Meanwhile, toast the almonds in the oil until golden. Place a slice of toast in each bowl, sprinkle with the almonds and butter flakes, lightly grill, and serve.
