Open Asparagus Burger
The perfect open asparagus burger recipe with a picture and simple step-by-step instructions.
- 1 Shallot
- 3 tbsp Rapeseed oil
- 1 tsp Curry powder
- 6 tbsp Orange juice
- 500 g Asparagus white
- 2 Eggs
- 3 tbsp Salad mayonnaise
- 100 g Cream yogurt
- Salt and pepper
- 4 Discs Toast
- 4 Discs Boiled ham
- 4 Stems Basil
- Finely dice shallot, heat 1 tablespoon of oil in a saucepan and sauté the shallot cubes in it. Add curry powder and sauté briefly. Add orange juice, bring to the boil briefly and let cool down a little.
- Peel the asparagus and cut off the woody ends. Cut the asparagus sticks in the middle once. Cook the eggs for about 3-5 min. Season to taste with salt and pepper.
- Fry the asparagus in a pan in 2 tablespoons of hot oil for 4-5 minutes. Toast the toast slices until golden brown. Spread a little curry sauce on each of the toast slices. Cover with ham. Spread the asparagus pieces on top and add a little curry sauce. Halve the eggs, place on top and serve sprinkled with basil leaves and a little curry powder.
