Orange – plum – red wine sauce for duck

Ingredients for 4 servings:

  • 200 ml red wine, dry
  • 200 ml chicken stock from the jar
  • 1 orange(s)
  • 1 tsp peppercorns, green, pickled
  • 1 stalk(s) cinnamon
  • 12 prunes, pitted
  • salt and pepper
  • 1 tsp sugar
  • 4 cloves

Peel the orange and cut the peel, excluding the white part, into very thin sticks about 3 cm long. Cut the plums into thin strips. Caramelize the sugar in a hot pan and deglaze with the red wine. Bring to a boil until the sugar has completely dissolved in the wine. Add 2 teaspoons of the orange zest, the cloves, the cinnamon stick, and the green peppercorns, and simmer for about 5 minutes. Then add the plums and chicken stock, simmer for another 5 minutes, and then strain the liquid into a sieve. Season the sauce to taste with salt and pepper.
