Orange spiced couscous with carrots

Ingredients for 4 servings:

  • 300 g couscous, instant
  • 300 g carrot(s)
  • 4 oranges
  • 1 onion(s)
  • 1 tbsp rapeseed oil
  • 2 tbsp raisins
  • 1 tsp cinnamon powder
  • 1 pinch(s) chili powder or cayenne pepper
  • ½ tsp turmeric powder
  • ½ tsp cumin powder
  • 300 ml vegetable broth, hot
  • some salt

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 22 minutes

One-pot preparation, vegetarian, vegan

Peel and coarsely grate the carrots. Fillet the oranges and reserve the juice. Finely dice the onion and sauté in the oil. Add the remaining ingredients and bring to a boil. Cover the pot, remove from the heat, and let the couscous swell. This takes about 10-15 minutes. Then season with salt. This goes perfectly with pan-roasted lamb.
