Oriental lentil soup from the crockpot

Ingredients for 4 servings:

  • 100 g lentils, brown
  • 1 orange(s)
  • 400 ml vegetable stock
  • 400 g mixed vegetables, e.g. broccoli, cauliflower, corn, carrots
  • 1 small piece(s) of ginger, finely grated
  • 1 clove(s) garlic
  • ½ tsp cumin
  • 1 chili pepper(s)
  • 200 ml milk
  • 100 g light cream
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 3 hours; Total time approx. 3 hours 10 minutes

Squeeze the orange and pour the juice into the crockpot along with the lentils and vegetables. Add the vegetables (fresh or frozen). Top with stock and pour in the milk until everything is covered. Add the crème légère. Chop the chili pepper, add the spices, and stir. Cook on high for about 3 hours, until the lentils are tender.
