fine, slightly exotic side dish – can also be used cold as a spread

Cook prepared potatoes and carrots in salted water until tender, drain, and press or mash through a potato ricer until the desired consistency is reached. Stir in tahini, garlic, orange juice, and a little more milk or cream, if desired, until the desired consistency is reached. Season to taste with a pinch of cumin, salt, and pepper. Garnish with toasted sesame seeds and parsley, if desired. The puree goes well with beef or lamb fillet, poultry, or roasted feta cheese. Tip: Any leftovers can be used as a cold spread on bread or, with a little cream, can be turned into a delicious dip.
