Ingredients for 2 servings:
- 3 bell peppers
- 800 g potatoes, peeled
- some chives
- some nutmeg
- salt and pepper
- e.g. water (potato cooking water)
- e.g. cheese (slices)
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes
Wash and deseed the peppers, trim off the tops, and cut each lengthwise into about three pieces, resembling small boats. Boil the potatoes and mash them with a little potato water, chives, and the remaining spices using a potato masher. Don’t use too much water; the mixture should be rather firm. Preheat the oven to about 180°C (top/bottom heat). Place the pepper boats on a baking sheet lined with baking paper and then spoon in the mashed potatoes. Sprinkle the cheese between the peppers and the mashed potatoes, if desired, or right on top. Bake the pepper boats for about 15-20 minutes, depending on how firm you want the mashed potatoes and how cooked you like them. The flavor is fresh, thanks to the juicy peppers and spicy mashed potatoes.
