Ingredients for 4 servings:
- 6 tbsp olive oil
- 1 bell pepper(s), red, peeled, pitted and cut into strips
- 4 lobster(s)
- 16 mussels (clams), with shell
- 200 g mussels (clams), with shell
- 1 chicken, cut into 8 pieces
- 400 g rabbit meat (or pork), cut into 2 cm cubes
- 400 g green beans, cut into pieces
- 3 garlic cloves, chopped
- 1 tbsp parsley, chopped
- 2 tbsp tomato paste
- 300 g rice (short grain rice)
- ½ tsp saffron
- 1 liter chicken broth
- 1 lemon(s), cut into long eighths
- Salt
Instructions

Heat the olive oil in a paella pan and fry the bell pepper strips. Add the lobster and fry for four minutes. Remove the bell pepper and lobster and set aside. Brown the chicken and rabbit pieces in the pan on all sides. Add the beans and continue frying. Then stir in the garlic, parsley, and tomato paste. Stir in the rice until well combined. Dissolve the saffron in the chicken stock and pour over the rice. Bring to a boil, season with salt, and simmer gently over low heat for 10 minutes without stirring. Press the clams into the rice, garnish with the bell pepper strips and the lobster, and let the rice simmer for another 10 minutes. Remove the pan from the heat and let stand for 10 minutes. Cook the mussels separately in salted water until they open. Garnish the paella with the opened mussels and serve with the lemon wedges in the paella pan.
