Ingredients for 6 servings:

  • 1 kg minced beef or mixed
  • 1 tbsp meatloaf seasoning or meatball seasoning
  • 1 ½ tsp salt
  • 6 tbsp breadcrumbs
  • 1 bell pepper(s), red
  • 1 m.-sized onion(s)
  • 2 eggs
  • 200 ml vegetable stock
  • 1 can tomatoes, chopped
  • Oil for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

This delicious meatloaf will satisfy everyone and is very tasty and easy to prepare.

Preheat oven to 180°C fan-assisted oven or 200°C conventional oven. First, dice an onion and dice the bell pepper. Fry both in a little oil in a pan until lightly browned. Then knead the minced meat with the eggs, breadcrumbs, spices, salt, and onion-pepper mixture. Brush an ovenproof dish (roasting pan or deep casserole dish) with oil to make it easier to clean later. Form the minced meat mixture into an oblong roast and place it in the dish. Pour a can of tomatoes and the vegetable stock over the roast. If you like more sauce, you can double the quantity. Bake everything together in the preheated oven for 50 minutes. Serve with well-cooked potatoes and roasted peas and carrots. Tip: For the peas and carrots, simply sauté a finely chopped onion in a little oil and then add a large can of (drained) peas and carrots and fry.
