Sauté diced onions in a small saucepan with bay leaves in oil. Add some torn sauerkraut, season with the spices, stir, and add the cup of water. Simmer for about 20 minutes until slightly tender, then season to taste. Rinse and dry the fish fillet, season with salt and pepper, and spread with tomato paste or pesto cream. Place on the spread-out ham slices, wrapping the fish in it. Fry in hot fat over medium heat on both sides until the ham is nice and crispy. Then turn off the heat and let it simmer for about 5 minutes. Serve with mashed potatoes alongside the fish and sauerkraut.
