Ingredients for 4 servings:
- 100 g butter
- 2 eggs
- ½ bunch parsley, finely chopped
- 100 g Parmesan, finely grated
- 1 garlic, pressed
- Salt, ideal: fleur de sel
- Pepper, freshly ground
- 1 liter beef broth or groundnut broth
- some breadcrumbs
- possibly butter for frying
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
as a soup garnish, or fried as finger food
Combine the butter, eggs, Parmesan cheese, garlic, and parsley thoroughly and season generously with salt and pepper. Add enough breadcrumbs to the dough to achieve a dough-like consistency. Form small balls with your hands. Heat the bouillon or broth and let the Parmesan dumplings cook in it. You can enjoy them as a soup garnish, or remove them from the soup and fry them in butter until golden brown. Let them cool, then serve with a toothpick as finger food.
