Parsley aioli

Ingredients for 1 servings:

  • 1 egg yolk
  • 1 pinch of salt
  • 2 tbsp lemon juice
  • 2 garlic cloves
  • 100 ml oil
  • ⅛ liter whipped cream
  • 2 tbsp parsley, flat

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Combine the egg yolk and lemon juice in a mixing bowl and whisk together. Peel the garlic and add it to the mixture. Add the oil, a few drops at a time, then in a thin stream, using a mixer on high speed until a thick mayonnaise forms. Then wash and finely chop the parsley and fold it into the mayonnaise along with the whipped cream. Finally, season with salt and black pepper to taste and let it stand until ready to serve. Delicious with salads and fried fish.
